Pink pancakes

INGREDIENTS
- 400g (2 cups) strawberry
- 250ml (1 cup) water 200g (1 cup) sugar 2 egg yolks 3 egg whites 20g milk (4 tsp) 40g flour (5 tbsp) 1 tsp vanilla extract 25g sugar 2 tbsp strawberry syrup 1 tsp lemon juice
METHOD
- Simmer strawberry with water for 15 minutes on low heat, strain it. Simmer with sugar for another 10 minutes.
- Mix egg yolks with milk and vanilla extract, add in flour, prepared syrup, and red coloring.
- Beat egg whites with lemon juice and sugar, and mix in the flour mixture.
- Fry pancakes for 3 minutes from both sides on low heat.
- Serve with powdered sugar, strawberries, and prepared strawberry syrup.
