Brownie cake


  • 110g (½ cup) unsalted butter 210g (1 cup) soft brown sugar 125g (4 and 1/2 oz) chocolate (dark/bittersweet), chopped 1 tbsp maple syrup 2 large eggs 1 tsp vanilla extract 2 tbsp cocoa powder 1 tsp instant coffee a pinch of salt ½ tsp baking powder 100g (¾ cup) all-purpose flour Fresh strawberries for decoration. Whipped cream (or even cream!)
  • Powdered sugar for decoration.


  1. Melt the butter in a pan over medium heat and stir in the dark brown sugar and dark chocolate.
  2. Stir in the honey and instant coffee and mix until everything is well combined.
  3. Remove from the stove, and in the same pan, stir in the eggs, baking powder, salt, cocoa powder, and all-purpose flour.
  4. Mix until everything is just combined.
  5. Transfer the whole brownie batter into an 8-inch round cake pan greased with butter.
  6. Bake in an already heated oven at 180°C/350°F for about 20 minutes.
  7. Serve with a dusting with powdered sugar and fresh strawberry.
