Sponge cake

INGREDIENTS

  • 5 egg yolks
  • 50ml (1/4 cup) cooking oil
  • 80ml (1/3 cup) milk
  • pinch of salt
  • 5 egg whites
  • 80g (2/3 cup) flour
  • 80g (1/3 cup) sugar
  • 5g (1 tsp) vanilla extract
  • hot water

METHOD

  1. Preheat the oven to 150°C/300°F.
  2. In a pot heat milk and oil until bubbles appear.Pour the warm mixture into a large bowl and mix well.
  3. Add flour and a pinch of salt, and stir to combine.Stir in egg yolks and vanilla extract, and set aside.
  4. In another bowl beat egg whites with sugar until soft meringue forms.
  5. Stir 2-3 tablespoons of the egg whites into the egg yolks mixture and pour the egg yolks mixture into the bowl with meringue.
  6. Carefully stir from bottom to top until smooth.
  7. Line a square baking mold with parchment paper, leaving 5cm of paper additionally from all sides. Pour the batter into the mold.
  8. Place the cake mold into a big baking pan and fill the pan with hot water.
  9. Bake at 150°C/300°F for 30 minutes, then reduce the heat to 130°C/260°F and continue to bake for 30 minutes more.
  10. Slice and enjoy!
