Oat Milk Dutch Baby with Strawberries and Rhubarb
Ingredients for 1 Oat Milk Dutch Baby:
- 2 large eggs
- 1/4 teaspoon vanilla
- 1/4 teaspoon kosher salt, or 1/8 teaspoon fine salt
- 1/4 cup all-purpose flour
- 1/3 cup oat milk
- Place in cold oven and set heat to 500 F. and timer to 25 minutes. Start checking at 20 minutes, but let bake until very well-browned before removing. Serve immediately.
For the Strawberry and Rhubarb topping (Makes enough for 2 Dutch Babies):
- 1 1/2 cups quartered strawberries, rinsed and drained
- 3 tablespoons sugar, divided
- 1/2 teaspoon lemon zest
- 1 tablespoon freshly squeezed lemon juice
- 1/2 cup sliced rhubarb
- 1/4 cup water
- Macerate strawberries with 1 tablespoon of the sugar, plus the lemon zest and juice.
- Cook rhubarb with water and remaining 2 tablespoons of sugar until soft and syrupy. Let cool before adding to berries.
