Blanket focaccia


  • 250ml (1 cup) of water 7g (2 tsp) dry yeast 10g (1 tbsp) sugar 16g (2 tbsp) flour
  • 450g (3 cup) flour 4g (1 tsp) salt
  • 80ml (1/3 cup) olive oil 2 cloves garlic Basil Parsley Black olives 150g mozzarella


  1. Prepare sourdough from water, yeast, sugar, and flour. Add flour and salt. Knead the dough. Leave to rest for 30 minutes.
  2. Chop basil and parsley. Add garlic and chopped basil and parsley to the olive oil.
  3. Make a circle out of the dough and place in a baking tray.
  4. Cut the dough into squares. Coat it with the oil mixture.
  5. Arrange the chopped olives and sprinkle with mozzarella.
  6. Bake at 360°F/180°C for 20 minutes. Serve.
