Blanket focaccia

INGREDIENTS
- 250ml (1 cup) of water 7g (2 tsp) dry yeast 10g (1 tbsp) sugar 16g (2 tbsp) flour
- 450g (3 cup) flour 4g (1 tsp) salt
- 80ml (1/3 cup) olive oil 2 cloves garlic Basil Parsley Black olives 150g mozzarella
METHOD
- Prepare sourdough from water, yeast, sugar, and flour. Add flour and salt. Knead the dough. Leave to rest for 30 minutes.
- Chop basil and parsley. Add garlic and chopped basil and parsley to the olive oil.
- Make a circle out of the dough and place in a baking tray.
- Cut the dough into squares. Coat it with the oil mixture.
- Arrange the chopped olives and sprinkle with mozzarella.
- Bake at 360°F/180°C for 20 minutes. Serve.
