Hand Torn Cabbage

INGREDIENTS

- 1.4 lb (640 grams) of cabbage, torn by hand
- 1.5 tbsp of Chinese black vinegar (Amazon Link - https://geni.us/LbEO)
- 8-10 pieces of dry chilies, seeded and cut in half (Amazon Link - https://geni.us/coMV)
- 4 cloves of garlic, sliced thinly
- 1 tsp of salt or to taste
- 2 tsp of soy sauce (Amazon Link - https://geni.us/sTa6Ep)
- 2-3 tbsp of vegetable oil to stir fry

INSTRUCTIONS

  1. Heat up your wok and add the vegetable oil. Toss in the cabbage along with the garlic and dried chilies. Stir over high heat for a few minutes to get some nice char. It will taste like roasted cabbage.
  2. Add soy sauce, salt, and 1 tbsp of the Chinese black vinegar. Stir for a minute. Turn off the heat. Before serving, add the remaining black vinegar and mix thoroughly. This will stabilize the flavor Because the vinegar we add before evaporated a little bit during cooking.
