Hand Torn Cabbage
INGREDIENTS
- 1.4 lb (640 grams) of cabbage, torn by hand
- 1.5 tbsp of Chinese black vinegar (Amazon Link - https://geni.us/LbEO)
- 8-10 pieces of dry chilies, seeded and cut in half (Amazon Link - https://geni.us/coMV)
- 4 cloves of garlic, sliced thinly
- 1 tsp of salt or to taste
- 2 tsp of soy sauce (Amazon Link - https://geni.us/sTa6Ep)
- 2-3 tbsp of vegetable oil to stir fry
INSTRUCTIONS
- Heat up your wok and add the vegetable oil. Toss in the cabbage along with the garlic and dried chilies. Stir over high heat for a few minutes to get some nice char. It will taste like roasted cabbage.
- Add soy sauce, salt, and 1 tbsp of the Chinese black vinegar. Stir for a minute. Turn off the heat. Before serving, add the remaining black vinegar and mix thoroughly. This will stabilize the flavor Because the vinegar we add before evaporated a little bit during cooking.
