Healthy Beef & Pepper Rice Bowl
- 1 pound beef bite pieces or ground beef
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 1/3 chopped green bell
- 1/3 chopped red bell pepper
- 1/3 chopped onions
- 1/2 beef stock
- 2 cups cooked rice
Add 1 tablespoon olive oil to a non-stick skillet. Add beef and cook over med-high heat, cook 3-5 minutes, stirring often. Add salt, black pepper, and bell peppers, Continue cooking for 8 minutes, stirring constantly to keep it from burning the bottom of the pan. Add onions, beef stock and cooked rice. Cook, stirring for about 2 minutes or more. Remove from the heat and let it sit for 2 minutes before serving.
