mini brioche in the ice tray

INGREDIENTS

  • 300g (2 1/2 cups) flour
  • 2 tbsp sugar
  • 7g dry yeast
  • ½ tsp salt
  • 2 eggs
  • 180ml (3/4 cup) milk
  • 5 tbsp vegetable oil
  • grated cheese
  • Beaten egg
  • Melted butter

METHOD

  1. Mix the warm milk with the yeast and sugar in a bowl. Add 2 eggs, flour, and mix.
  2. Add salt, and oil and mix again.
  3. Pour the dough on a table and massage until you get a homogeneous ball-shaped dough. Cover and let stand for 30 minutes.
  4. Flatten with a rolling pin until you get a thin dough. Cut several pieces the size of an ice tray.
  5. Sprinkle some flour on the ice tray and place a piece on top.
  6. With your hands, shape the ice holes well. Add grated cheese to each hole.
  7. Smear a beaten egg on all edges of the dough. Place another piece of dough on top. Cut off the edges.
  8. Sprinkle a little flour on a tray lined with baking paper. Turn the icing tray over so that the dough remains on the tray.
  9. Coat the entire block with beaten egg and bake for 30 minutes at 180°C. Spread melted margarine on the block and cut it into pieces.
