Zucchini and sausage skewers


  • 3 zucchini
  • Salt
  • 30g (1/4 cup) of breadcrumbs
  • 50g (1/2 cup) of parmesan cheese
  • 1 tsp of sweet paprika
  • Salt
  • Pepper
  • 300g of fresh sausage
  • 1 egg
  • Extra virgin olive oil


  1. Cut the zucchini into medium slices with a vegetable shredder and add them into the boiling water for a minute.
  2. Mix the breadcrumbs with parmesan cheese, sweet paprika, salt, pepper, and mix all.
  3. Cut the sausage into small pieces to prepare them. Arrange the prepared zucchini slices on the cutting board, add the piece of sausage and roll them out.
  4. Transfer each skewer to the egg and then cover with the breadcrumbs mixture and stick them in the skewer sticks.
  5. Arrange the skewers into the baking tray covered with parchment paper and sprinkle with olive oil. Bake in oven at 200°C/392°F for 20 minutes or until they are golden brown.
