Zucchini and sausage skewers
INGREDIENTS
- 3 zucchini
- Salt
- 30g (1/4 cup) of breadcrumbs
- 50g (1/2 cup) of parmesan cheese
- 1 tsp of sweet paprika
- Salt
- Pepper
- 300g of fresh sausage
- 1 egg
- Extra virgin olive oil
METHOD
- Cut the zucchini into medium slices with a vegetable shredder and add them into the boiling water for a minute.
- Mix the breadcrumbs with parmesan cheese, sweet paprika, salt, pepper, and mix all.
- Cut the sausage into small pieces to prepare them. Arrange the prepared zucchini slices on the cutting board, add the piece of sausage and roll them out.
- Transfer each skewer to the egg and then cover with the breadcrumbs mixture and stick them in the skewer sticks.
- Arrange the skewers into the baking tray covered with parchment paper and sprinkle with olive oil. Bake in oven at 200°C/392°F for 20 minutes or until they are golden brown.
