Chicken rolls with orange

INGREDIENTS

  • 600g (1.3 lb) chicken breast, thinly sliced
  • 70g (1/2 cup) breadcrumbs
  • 60g stringy cheese
  • 9 slices bacon
  • 2 oranges, juiced
  • 4g (2 tsp) orange zest (divided)
  • 1 clove of garlic, minced
  • 1 clove of garlic, whole
  • 3g (1 tbsp) parsley, chopped
  • 1 sprig rosemary
  • 3 g (1 tsp) cornstarch
  • Salt to taste
  • 30ml (2 tbsp) vegetable oil

METHOD

  1. In a bowl combine breadcrumbs, parsley, minced garlic, and juice from half of an orange mix well.
  2. Slice chicken breast into thin slices.
  3. Arrange one slice of chicken on a cutting board, put a slice of bacon on top, and spoon some seasoned breadcrumbs and a piece of cheese.
  4. Roll the meat slice and secure the roll with the toothpick.
  5. Heat olive oil over medium heat, and add rosemary and garlic. Arrange chicken rolls in the pan and cook for 3-5 minutes on both sides.
  6. Take rosemary and garlic out of the pan. Season the rolls with salt, and add orange zest and juice from one orange. Close with a lid and cook for 15 minutes.
  7. Take the rolls out and add juice from half of an orange and cornstarch to the pan.
  8. Mix well and cook the sauce for 2-3 minutes or until thick.
  9. Arrange rolls on a serving plate and pour with the sauce. Serve immediately.
