Chicken Strips 4 Ways

Cheddar Ranch Chicken Strips

Ingredients
for 5 servings

2 chicken breasts
2 ½ cups buttermilk
1 packet ranch dressing mix
3 cups cheese cracker

Preparation

  1. Preheat oven to 425˚F (225˚C).
  2. On a cutting board, slice chicken breasts against the grain into strips.
  3. Place the chicken strips in a bowl and add in buttermilk and ranch packet. Stir until well-coated.
  4. Cover the bowl with plastic wrap and place in the refrigerator for at least an hour.
  5. Pour cheese crackers into a resealable bag and crush with a rolling pin until they become finely ground.
  6. Open the bag and place a marinated piece of chicken in the cracker crumbs. Coat the chicken with the crumbs and place on a parchment paper-lined baking sheet.
  7. Bake for 20 minutes, flipping halfway.
  8. Enjoy!


BBQ Chicken Tenders

Ingredients
for 6 tenders

1 chicken breast
1 cup seasoned bread crumbs
1 cup BBQ sauce

Preparation

  1. Preheat oven to 375°F (190°C).
  2. Slice the chicken into even strips.
  3. Dip the chicken strips into the BBQ sauce, then coat them in the bread crumbs.
  4. Place on a baking sheet lined with parchment paper and bake for 15 minutes.
  5. Brush the remaining BBQ sauce evenly on both sides of the chicken strips and bake for another 10 minutes and serve.
  6. Enjoy!

 

Garlic Parmesan Chicken Tenders


Ingredients

for 10 pieces

¾ cup flour
3 eggs
2 tablespoons lemon juice
1 cup panko breadcrumbs
½ cup parmesan cheese
1 tablespoon garlic powder
½ tablespoon Lemon zest
salt, to taste
pepper, to taste
1 ¼ lb chicken tenders, package
olive oil cooking spray, or another preferred oil

Preparation

  1. Preheat oven to 425°F (220°C).
  2. Combine the egg and the lemon juice.
  3. In a separate bowl, combine the panko bread crumbs, Parmesan, garlic powder, lemon zest, salt, and pepper.
  4. Coat the chicken tenders in flour and shake off any excess. Then dredge in the egg and lemon juice mixture and allow excess egg to drip off. Coat with the panko bread crumb mixture, turning until evenly coated.
  5. Lay chicken tenders flat on a baking sheet lined with aluminum foil and sprayed with nonstick cooking spray. Spray additional cooking spray over the chicken tenders to help them brown.
  6. Bake for 20-25 minutes (or until browned and chicken is cooked all the way through), flipping once halfway through.
  7. Serve with your favorite dip and some veggies for a fun appetizer or with garlic Parmesan roasted vegetables for dinner!

Ingredients
for 4 servings

2 boneless, skinless chicken breasts
½ cup bread crumb
½ cup grated parmesan cheese
1 teaspoon salt
½ teaspoon pepper
2 eggs
½ cup , shredded
, for dipping

Preparation

  1. Preheat oven to 325°F (190°C).
  2. Cut the chicken into strips.
  3. In one medium-sized bowl, mix the bread crumbs, parmesan, salt, and pepper.
  4. In another bowl, crack the eggs and whisk until scrambled.
  5. Coat the chicken in the egg, then in the bread crumbs, then repeat.
  6. Place the chicken tenders on a baking tray and bake for 20 minutes, flipping halfway through.
  7. Sprinkle each tender with mozzarella and bake again for 5 more minutes, or until cheese is melted.
  8. Serve with marinara.
  9. Enjoy!
