Tomato Soup Recipes

Here are three different tomato soup recipes for you to choose from:
Recipe 1: Classic Tomato Soup
Ingredients:
- 2 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cans (28 oz each) whole peeled tomatoes
- 2 cups chicken or vegetable broth
- 1/2 cup heavy cream
- 2 tsp sugar
- Salt and pepper, to taste
- Fresh basil leaves, chopped (optional)
Instructions:
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and minced garlic, and sauté until the onion is translucent.
- Add the whole peeled tomatoes and their juice, breaking up the tomatoes with a spoon.
- Add the chicken or vegetable broth, sugar, salt, and pepper, and bring to a boil.
- Reduce the heat and simmer for 20-25 minutes.
- Use an immersion blender or transfer the soup to a blender and blend until smooth.
- Return the soup to the pot and stir in the heavy cream.
- Heat through and serve hot, garnished with chopped fresh basil leaves, if desired.
Recipe 2: Roasted Tomato Soup
Ingredients:
- 2 lbs Roma tomatoes, halved
- 1 onion, chopped
- 4 cloves garlic, peeled
- 2 tbsp olive oil
- Salt and pepper, to taste
- 4 cups chicken or vegetable broth
- 1/2 cup heavy cream
- Fresh basil leaves, chopped (optional)
Instructions:
- Preheat the oven to 400°F (200°C).
- Arrange the halved tomatoes, chopped onion, and peeled garlic on a baking sheet.
- Drizzle with olive oil and sprinkle with salt and pepper.
- Roast for 30-35 minutes, until the vegetables are softened and lightly charred.
- Transfer the roasted vegetables to a large pot and add the chicken or vegetable broth.
- Bring to a boil, then reduce the heat and simmer for 15-20 minutes.
- Use an immersion blender or transfer the soup to a blender and blend until smooth.
- Return the soup to the pot and stir in the heavy cream.
- Heat through and serve hot, garnished with chopped fresh basil leaves, if desired.
Recipe 3: Spicy Tomato Soup
Ingredients:
- 2 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cans (28 oz each) crushed tomatoes
- 1 cup chicken or vegetable broth
- 1/4 cup hot sauce (such as Tabasco or Sriracha)
- 1/4 cup brown sugar
- Salt and pepper, to taste
- Sour cream or Greek yogurt, for serving
Instructions:
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the crushed tomatoes, chicken or vegetable broth, hot sauce, brown sugar, salt, and pepper, and bring to a boil.
- Reduce the heat and simmer for 15-20 minutes.
- Use an immersion blender or transfer the soup to a blender and blend until smooth.
- Return the soup to the pot and heat through.
- Serve hot with a dollop of sour cream or Greek yogurt on top.
