Here are three different tomato soup recipes for you to choose from:

Recipe 1: Classic Tomato Soup

Ingredients:

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cans (28 oz each) whole peeled tomatoes
  • 2 cups chicken or vegetable broth
  • 1/2 cup heavy cream
  • 2 tsp sugar
  • Salt and pepper, to taste
  • Fresh basil leaves, chopped (optional)

Instructions:

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and minced garlic, and sauté until the onion is translucent.
  3. Add the whole peeled tomatoes and their juice, breaking up the tomatoes with a spoon.
  4. Add the chicken or vegetable broth, sugar, salt, and pepper, and bring to a boil.
  5. Reduce the heat and simmer for 20-25 minutes.
  6. Use an immersion blender or transfer the soup to a blender and blend until smooth.
  7. Return the soup to the pot and stir in the heavy cream.
  8. Heat through and serve hot, garnished with chopped fresh basil leaves, if desired.

Recipe 2: Roasted Tomato Soup

Ingredients:

  • 2 lbs Roma tomatoes, halved
  • 1 onion, chopped
  • 4 cloves garlic, peeled
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 4 cups chicken or vegetable broth
  • 1/2 cup heavy cream
  • Fresh basil leaves, chopped (optional)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Arrange the halved tomatoes, chopped onion, and peeled garlic on a baking sheet.
  3. Drizzle with olive oil and sprinkle with salt and pepper.
  4. Roast for 30-35 minutes, until the vegetables are softened and lightly charred.
  5. Transfer the roasted vegetables to a large pot and add the chicken or vegetable broth.
  6. Bring to a boil, then reduce the heat and simmer for 15-20 minutes.
  7. Use an immersion blender or transfer the soup to a blender and blend until smooth.
  8. Return the soup to the pot and stir in the heavy cream.
  9. Heat through and serve hot, garnished with chopped fresh basil leaves, if desired.

Recipe 3: Spicy Tomato Soup

Ingredients:

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cans (28 oz each) crushed tomatoes
  • 1 cup chicken or vegetable broth
  • 1/4 cup hot sauce (such as Tabasco or Sriracha)
  • 1/4 cup brown sugar
  • Salt and pepper, to taste
  • Sour cream or Greek yogurt, for serving

Instructions:

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Add the crushed tomatoes, chicken or vegetable broth, hot sauce, brown sugar, salt, and pepper, and bring to a boil.
  4. Reduce the heat and simmer for 15-20 minutes.
  5. Use an immersion blender or transfer the soup to a blender and blend until smooth.
  6. Return the soup to the pot and heat through.
  7. Serve hot with a dollop of sour cream or Greek yogurt on top.
