Bread pockets with fried chicken
INGREDIENTS
- 5-6 bread slices Lettuce Cherry tomatoes
- Flour 2 eggs
- Breadcrumbs
- 1 chicken
- breast 1/2 tsp
- salt 1/2 tsp
- pepper 1/2 tsp
- rosemary 1 tsp
- lemon zest 1 tbsp
- lemon juice 2 tbsp
- olive
- oil 1/2 tsp
- paprika
METHOD
- Cut the bread diagonally and secure it with a toothpick to make a pocket. Bake at 170°C (340°F) for 10 minutes.
- Cut chicken breast into strips and sprinkle with salt, pepper, paprika, rosemary, oil, and lemon juice.
- Dip into the flour, egg wash, and breadcrumbs, and fry in hot oil until golden brown.
- Fill pockets with lettuce, cherries, and fried chicken.
