Bread pockets with fried chicken

INGREDIENTS

  • 5-6 bread slices Lettuce Cherry tomatoes
  • Flour 2 eggs
  • Breadcrumbs
  • 1 chicken
  • breast 1/2 tsp
  • salt 1/2 tsp
  • pepper 1/2 tsp
  • rosemary 1 tsp
  • lemon zest 1 tbsp
  • lemon juice 2 tbsp
  • olive
  • oil 1/2 tsp
  • paprika

METHOD

  1. Cut the bread diagonally and secure it with a toothpick to make a pocket. Bake at 170°C (340°F) for 10 minutes.
  2. Cut chicken breast into strips and sprinkle with salt, pepper, paprika, rosemary, oil, and lemon juice.
  3. Dip into the flour, egg wash, and breadcrumbs, and fry in hot oil until golden brown.
  4. Fill pockets with lettuce, cherries, and fried chicken.
