Spanakopita triangles
INGREDIENTS
- 200g (1 cup) of cooked spinach
- 170g (2 cups) of grated cheese
- Salt
- 100g of phyllo pastry
- Extra virgin olive oil
- Egg wash
- Sesame seeds
METHOD
- In a bowl add the spinach, grated cheese, salt, and mix to prepare the filling.
- Cut the phyllo pastry sheets into two sheets, lengthwise. Lay a pastry sheet on the work surface, drizzle a bit of oil, then place another sheet on top.
- Brush the egg wash on both ends of the phyllo sheet. Sprinkle the cheese spinach filling on 2/3 of the sheet. Fold the phyllo forming a triangle.
- Transfer the spanakopita triangles to the baking tray covered with parchment paper and brush with egg wash. Sprinkle sesame seeds and salt on top.
- Bake in the oven at 205°C/400°F for 30 minutes or until golden brown.
