Spanakopita triangles

INGREDIENTS

  • 200g (1 cup) of cooked spinach
  • 170g (2 cups) of grated cheese
  • Salt
  • 100g of phyllo pastry
  • Extra virgin olive oil
  • Egg wash
  • Sesame seeds

METHOD

  1. In a bowl add the spinach, grated cheese, salt, and mix to prepare the filling.
  2. Cut the phyllo pastry sheets into two sheets, lengthwise. Lay a pastry sheet on the work surface, drizzle a bit of oil, then place another sheet on top.
  3. Brush the egg wash on both ends of the phyllo sheet. Sprinkle the cheese spinach filling on 2/3 of the sheet. Fold the phyllo forming a triangle.
  4. Transfer the spanakopita triangles to the baking tray covered with parchment paper and brush with egg wash. Sprinkle sesame seeds and salt on top.
  5. Bake in the oven at 205°C/400°F for 30 minutes or until golden brown.
