Chicken Lababdar

Ingredients

For First Marination

  • 750 gms Chicken,( thigh/drumstick)
  • ½ tbsp Degi red chili powder,
  • ½ tsp Turmeric powder,
  • Salt to taste,
  • 1 tsp Lemon juice,
  • 1 tbsp Ginger Garlic paste,
  • 1 tsp Oil

For Second Marination

  • 2 heaped tbsp Curd, beaten,
  • 1 tbsp Gram flour

For Masala

  • 1 Mace,
  • 2-4 Green cardamom,
  • 2-4 Cloves,
  • 1 tsp Shahi jeera,
  • ¼ inch Cinnamon stick,
  • Salt to taste,
  • 9-10 Black peppercorns

For Ginger Garlic Paste

  • 1 inch Ginger, peeled, roughly chopped,
  • 5-6 Garlic cloves

For Gravy

  • 1 tbsp Oil,
  • 2-3 tbsp Ghee,
  • 1 Bay leaf,
  • ½ inch Cinnamon stick,
  • 2-3 Cloves,
  • 6-7 Black peppercorns,
  • Prepared Ginger Garlic Paste,
  • 2 medium size Onions, roughly chopped,
  • 5 medium size Tomatoes, roughly chopped,
  • 1 tsp Degi red chili powder,
  • 1 ½ tsp Coriander powder,
  • 2 cups Water,
  • Salt to taste,
  • 7-8 Cashewnut

Other Ingredients

  • 1 tbsp Oil

For Chicken Lababdar

  • 2-4 tbsp Butter, cube,
  • 1 large Onion, chopped,
  • 1 tsp Coriander powder,
  • 1 tsp Degi red chili powder,
  • 1 large Tomato, chopped,
  • Prepared Gravy,
  • Roasted Chicken,
  • ¼ cup fresh Cream,
  • Salt to taste,
  • little Water or stock,
  • ¼ tsp Kewra water,
  • 1 tsp Prepared Masala,
  • ½ tsp Sugar

For Garnish

  • ½ inch Ginger, julienned,
  • Coriander sprig,
  • Green chillies, chopped (less spicy)
  • Prepared Masala

Process

For First Marination

  1. In a bowl, add chicken drumsticks and thigh. Now, add degi red chili powder, turmeric powder, salt to taste, lemon juice, ginger garlic paste, oil and mix well. Marinate it for 15-20 minutes.

For Lababdar Masala

  1. In a pan, add mace, green cardamom, cloves, shahi jeera, cinnamon stick and salt.
  2. Roast the whole spices for 20-30 seconds or until fregrant. Now, add black peppercorns.

For Ginger Garlic Paste

  1. In a mortar pestle, add ginger and garlic. Make a coarse mixture. Keep aside for further use.

For Lababdar Gravy

  1. In a sauce pot, add ghee and oil. Once it gets hot, add bayleaf, cinnamon sticks, cloves, black peppercorns. Now, add prepared ginger garlic paste, onions. Saute for 10-15 seconds.
  2. Add tomato, degi red chili powder, coriander powder. Mix it well. Add water, salt to taste and cashew nuts.
  3. Let it boil for 10-12 minutes. Let it cool down.
  4. Now remove all whole spices from gravy and grind it into smooth gravy. Keep it aside for further use.

For Second Marination

  1. In the marinated chicken add curd and besan.

For Grilling the Chicken

  1. In a grill pan add oil. Once it gets hot add marinated chicken pieces.
  2. Grill them from both sides until cooked.

For Chicken Lababdar

  1. In a sauce pot, add butter, onion. Saute it till translucent.
  2. Now add coriander powder, degi red chili powder and tomatoes. Saute well.
  3. Now add prepared gravy, grilled chicken and fresh cream. Salt to taste
  4. Add kewra water, prepared lababdar masala, crushed black pepper and pinch of sugar.
