Carrots omelettes
INGREDIENTS
300g of stale bread 2 carrots 8 eggs 80g of parmesan cheese Salt Extra virgin olive oil 1/2 tsp of dried parsley
METHOD
- Slice the carrots and cook for 8 minutes with olive oil.
- Soak the bread in water for a few seconds and chop it. Mix chopped bread with olive oil and parsley.
- Layout sliced carrots on the pan, and top with mixed eggs, salt, pepper, parmesan cheese, and bread. Cover, and cook on low heat for about 5 minutes.
- Turn it over and cook for a few minutes more.
