Carrots omelettes

INGREDIENTS

300g of stale bread 2 carrots 8 eggs 80g of parmesan cheese Salt Extra virgin olive oil 1/2 tsp of dried parsley

METHOD

  1. Slice the carrots and cook for 8 minutes with olive oil.
  2. Soak the bread in water for a few seconds and chop it. Mix chopped bread with olive oil and parsley.
  3. Layout sliced carrots on the pan, and top with mixed eggs, salt, pepper, parmesan cheese, and bread. Cover, and cook on low heat for about 5 minutes.
  4. Turn it over and cook for a few minutes more.
