Pancakes Vs. Waffles

1. Fluffy Japanese Pancakes

Ingredients
for 4 servings

2 egg yolks
¼ cup sugar
½ cup milk
¾ cup pancake mix
4 egg whites
butter, to serve
syrup, to serve
assorted berry, to serve

Preparation

  1. Mix together the egg yolks, sugar, milk, and pancake mix in a very large bowl until it is smooth with no large lumps.
  2. In another large bowl, beat the egg whites with a hand mixer until stiff peaks form when lifted.
  3. Carefully fold the egg whites into the pancake batter, until just incorporated, making sure not to deflate the batter.
  4. Grease two 3.5-inch (9 cm) metal ring moulds and set them in the middle of a pan over the lowest heat possible.
  5. Fill the moulds about ¾ of the way full with the batter, then cover the pan and cook for about 10 minutes, until the center of the pancakes are slightly jiggly.
  6. Release the pancakes from the bottom of the pan with a spatula, then carefully flip them over, making sure not to spill any batter inside.
  7. Cover and cook for another 5 minutes, then serve with butter, syrup, and berries!
  8. Enjoy!

2. Turtle Waffles

Ingredients
for 2 servings

SERVINGS: 8

1 ¼ cups waffle mix
¼ cup unsweetened cocoa powder
3 tablespoons vegetable oil
1 egg
½ cup semi-sweet chocolate chip
1 ¼ cups water
1 cup chopped pecans
1 whipped cream, for topping
1 maraschino cherries, for topping
CARAMEL SAUCE

¾ cup brown sugar
3 tablespoons butter
½ cup heavy cream
1 salt, Large pinch

Preparation

  1. In a large mixing bowl, combine waffle mix, egg, oil, cocoa powder, and chocolate chips. Stir until mixture is smooth.
  2. In a small saucepan over medium-low heat, combine ingredients for caramel sauce and bring to a low boil, whisking constantly once mixture starts to boil. Continue to whisk until mixture darkens slightly and begins to thicken. Remove from heat and let cool for at least 30 minutes.
  3. Preheat a greased waffle iron. Pour ½ cup of waffle mix into the iron, then top with ¼ cup of pecans and a few tablespoons of caramel. Cover that with another half cup of waffle mix. Close waffle iron and cook according to manufacturer directions.
  4. When waffle is cooked to desired crispness, remove to a plate. Top with more pecans, a drizzle of caramel, a dollop of whipped cream, and a cherry on top.
  5. Enjoy!

3. Strawberry Shortcake Pancakes

Ingredients
for 4 servings

STRAWBERRY SYRUP

2 cups strawberry, quartered
1 cup water
1 cup sugar
1 tablespoon cornstarch, optional
1 tablespoon water, optional
BUTTERMILK PANCAKES

1 egg
3 tablespoons butter, melted
1 ½ cups buttermilk
1 ½ cups all-purpose flour
2 tablespoons sugar
1 tablespoon baking powder
1 teaspoon baking soda
⅛ teaspoon salt
butter
whipped cream, optional

Preparation

  1. In a saucepan over medium heat, add the quartered strawberries, water, and sugar. Stir until combined and bring to a boil.
  2. Turn down the heat and simmer for 10 minutes. If the syrup is too thin, mix together the cornstarch and water and add it to the strawberries. Stir again and cook until thickened about 5 minutes. Set aside.
  3. In a medium bowl, mix together the wet ingredients.
  4. In a large bowl, mix together the dry ingredients.
  5. Slowly add the wet ingredients to the dry and gently mix until just incorporated. Do not over-mix!
  6. Heat 1 tablespoon of butter on a skillet over medium heat.
  7. Add ½ cup of batter to the skillet and cook until bubbles form on the surface of the pancake. Flip and set aside.
  8. Stack the pancakes and top with strawberry syrup and a dollop of whipped cream.
  9. Enjoy!

4. Chicken & Waffle Bites

Ingredients
for 2 servings

⅓ cup mustard
⅓ cup maple syrup
⅓ cup honey
1 chicken breast, cut into bite-sized pieces
1 teaspoon salt
1 teaspoon pepper
1 teaspoon cayenne pepper
1 egg
¾ cup whole milk
1 teaspoon vanilla
2 ½ tablespoons oil
1 cup flour
½ tablespoon baking powder
1 tablespoon sugar
1 salt, pinch

Preparation

  1. Combine the wet ingredients in a mixing bowl. In another mixing bowl, sift together the dry ingredients.
  2. Add the wet to the dry and mix until smooth.
  3. Add the seasoned chicken to the waffle batter. Make sure the chicken is coated in the batter.
  4. Heat your waffle iron on the lowest setting. Spoon a piece of chicken and additional batter into each section. Cook on the lowest setting for approximately 10 minutes.
  5. Enjoy!
