Eggplant Dip Recipe
Ingredients:
- 4 pcs medium eggplants
- 3 cloves garlic
- 2 tbsp lemon juice
- 1/4 cup tahini
- 1/3 cup olive oil
- 1/4 tsp cumin powder
- season with salt
Garnish:
- olive oil
- smoked paprika
- pumpkin seeds
- dill leaves
- Serve with chopped vegetables and tortilla chips
Green Goddess Salad
Ingredients:
- 1 small cabbage
- 1 large cucumber
- 1/4 cup green onion
- Dressing:
- 1 cup basil
- 2 cloves garlic
- 1-2 shallots
- juice from 2 lemons
- 1/4 cup almond nuts
- 1/3 cup nutritional yeast
- himalayan pink salt
- cilantro
- 1/4 cup olive oil
- Serve with tortilla chips
Pesto Hummus
Ingredients:
- 200g chickpeas
- juice from half of lemon
- 5 cloves garlic
- 1/4 cup tahini
- 1/4-1/2 cup olive oil
- 1/4-1/2 cup cold water
- 1 cup basil leaves
- 2 tbsp nutritional yeast
- salt to taste
- garnish: pumpkin seeds and basil leaves
- vegetable sticks
- wheat tortillas
