Eggplant Dip Recipe

Ingredients:

  • 4 pcs medium eggplants
  • 3 cloves garlic
  • 2 tbsp lemon juice
  • 1/4 cup tahini
  • 1/3 cup olive oil
  • 1/4 tsp cumin powder
  • season with salt

Garnish:

  • olive oil
  • smoked paprika
  • pumpkin seeds
  • dill leaves
  • Serve with chopped vegetables and tortilla chips

Green Goddess Salad

Ingredients:

  • 1 small cabbage
  • 1 large cucumber
  • 1/4 cup green onion
  • Dressing:
  • 1 cup basil
  • 2 cloves garlic
  • 1-2 shallots
  • juice from 2 lemons
  • 1/4 cup almond nuts
  • 1/3 cup nutritional yeast
  • himalayan pink salt
  • cilantro
  • 1/4 cup olive oil
  • Serve with tortilla chips

Pesto Hummus

Ingredients:

  • 200g chickpeas
  • juice from half of lemon
  • 5 cloves garlic
  • 1/4 cup tahini
  • 1/4-1/2 cup olive oil
  • 1/4-1/2 cup cold water
  • 1 cup basil leaves
  • 2 tbsp nutritional yeast
  • salt to taste
  • garnish: pumpkin seeds and basil leaves
  • vegetable sticks
  • wheat tortillas
