Flan caramel cake


  • 200g (1 cup) sugar 3ml lemon juice 4 eggs 2 yolks
  • 100g (1/2 cup) sugar 1 tsp vanilla extract 400ml (1 3/4 cup) milk 125ml (1/2 cup) whipping cream
  • 2 egg whites 50g (1/4 cup) sugar 2g salt 2 egg yolks 60g (1/2 cup) cake flour 15ml olive oil 10g cocoa powder 15ml fresh milk


  1. In a pan heat sugar until brown, add lemon juice, and pour into the mold.
  2. Mix eggs with sugar, add vanilla milk, and whipping cream, and sift the mixture.
  3. In the bowl beat together egg whites with sugar and salt, add in yolks, sift the flour with cocoa powder and add olive oil with milk.
  4. Top caramel with flan mixture and sponge. Bake at 150°C (300°F) for 1 hour.
