Cherry tomato muffins

They are perfect for a quick and delicious lunch!INGREDIENTS

2 zucchini Garlic powder Salt 3 eggs 70ml (1/3 cup) oil 100ml (2/5 cup) milk Pepper 60g (2 oz) parmesan 200g (1 ½ cup) flour 10g (2 tsp) baking powder Ham Cheese cubes Cherry tomatoes

METHOD

  1. Chop two zucchini into cubes.
  2. Fry zucchini in a little oil with garlic powder and salt.
  3. Make a mixture in a mixing bowl of eggs, oil, milk, salt, pepper, and parmesan. Add sifted flour and baking powder to the mixture. Add ham and fried zucchini and mix well.
  4. Pour the mixture into a muffin tin and arrange the cherry tomatoes on top.
  5. Bake at 360°F/180°C for 25 minutes. Serve.
