Cherry tomato muffins

They are perfect for a quick and delicious lunch!INGREDIENTS
2 zucchini Garlic powder Salt 3 eggs 70ml (1/3 cup) oil 100ml (2/5 cup) milk Pepper 60g (2 oz) parmesan 200g (1 ½ cup) flour 10g (2 tsp) baking powder Ham Cheese cubes Cherry tomatoes
METHOD
- Chop two zucchini into cubes.
- Fry zucchini in a little oil with garlic powder and salt.
- Make a mixture in a mixing bowl of eggs, oil, milk, salt, pepper, and parmesan. Add sifted flour and baking powder to the mixture. Add ham and fried zucchini and mix well.
- Pour the mixture into a muffin tin and arrange the cherry tomatoes on top.
- Bake at 360°F/180°C for 25 minutes. Serve.
