Meatloaf skewers

INGREDIENTS

400g minced meat 30g (3 tbsp) breadcrumbs 40g (4 tbsp) parmesan 2 eggs Salt Pepper Parsley 900g (2 lb) potatoes Oregano Olive oil Cherry tomatoes Cheese cubes

METHOD

  1. Make a mixture of meat, bread crumbs, parmesan, eggs, salt, pepper, and parsley.
  2. Season the potatoes with pepper, oregano, and olive oil.
  3. Make skewers of cherry tomatoes and cheese cubes.
  4. Wrap the skewers in the meat mixture.
  5. Put the sliced potatoes in a baking tray and arrange the skewers over it.
  6. Bake at 360°F/180°C for 45 minutes. Serve.
