Zucchini white parmigiana


  • 4 zucchini (large)
  • Salt
  • Olive oil
  • 350g of mozzarella
  • 150g of cheese
  • 250g of cooked ham
  • 30g (1/4 cup) of parmesan cheese


  1. Cut the zucchini to the length into 2 mm thick slices. Arrange them in a tray, sprinkle them with coarse salt and let them rest for 20 minutes so that they bring out their vegetation water.
  2. Oil a cake mold (22x15 cm - mold size) and make the first layer of zucchini. Add a little salt and arrange the mozzarella cubes, a few cubes of scamorza cheese, and 2-3 slices of cooked ham on top.
  3. Then proceed with a second layer and gradually with the others until you finish the ingredients. For the last layer add only the mozzarella and a sprinkling of Parmesan cheese.
  4. Bake in preheated oven at 180°C/360°F for 30 minutes.
