Breaded mozzarella
INGREDIENTS
- 6 slices of toast bread
- 6 anchovy fillets
- 2 mozzarella balls, sliced
- 4 eggs
- 80g (1/2 cup) flour
- 100g (3/4 cup) breadcrumbs
- 25g (1/2 cup) cornflakes, crushed
- oil (for frying)
METHOD
- Slice mozzarella and place it on paper towels to drain.
- Arrange mozzarella on top of half of the bread slices. Add 2 anchovy fillets to each toast, top with some more mozzarella, and close with another slice of bread.
- Press each “sandwich” well, cut off bread edges, and cut “sandwiches” into triangles.
- In a bowl mix breadcrumbs and crushed cornflakes.
- Coat each toast in flour, then dip in beaten eggs and coat in the breadcrumb mix.
- Arrange toasts on a ray and freeze for 20 minutes.
- Dip again in beaten eggs and coat in the breadcrumb mix.
- Fry in hot oil for 2-3 minutes on each side.
