Breaded mozzarella

Breaded mozzarella


  • 6 slices of toast bread
  • 6 anchovy fillets
  • 2 mozzarella balls, sliced
  • 4 eggs
  • 80g (1/2 cup) flour
  • 100g (3/4 cup) breadcrumbs
  • 25g (1/2 cup) cornflakes, crushed
  • oil (for frying)


  1. Slice mozzarella and place it on paper towels to drain.
  2. Arrange mozzarella on top of half of the bread slices. Add 2 anchovy fillets to each toast, top with some more mozzarella, and close with another slice of bread.
  3. Press each “sandwich” well, cut off bread edges, and cut “sandwiches” into triangles.
  4. In a bowl mix breadcrumbs and crushed cornflakes.
  5. Coat each toast in flour, then dip in beaten eggs and coat in the breadcrumb mix.
  6. Arrange toasts on a ray and freeze for 20 minutes.
  7. Dip again in beaten eggs and coat in the breadcrumb mix.
  8. Fry in hot oil for 2-3 minutes on each side.
