Sweet brioches

INGREDIENTS

For the dough:

  • 150ml (2/3 cup) of warm milk
  • 50g (1/4 cup) of sugar
  • 7g of dry yeast
  • 40ml (8 tsp) of vegetable oil
  • 1 egg
  • 380g (2 7/8 cups) of flour
  • 1/3 tsp of salt

For the cream: 40g (1/2 cup)of sugar

  • 20g (1/4 cup) of corn starch
  • 1 Egg yolk
  • 250ml (1 cup) of warm milk
  • 1 tsp lemon zest
  • 60g (1/3 cup) Chocolate chips
  • Egg yolk
  • Brown sugar
  • Powdered sugar

METHOD

  1. In a bowl mix together milk sugar and yeast. Left for 10 minutes, add in oil, egg, flour, and salt. Mix and let it rise for 1 hour. In a pan mix together sugar, cornstarch, egg yolk, lemon zest, and milk.
  2. Roll out the dough and cover 2/3 of it with prepared cream and chocolate chips, fold the dough into three parts and cut into strips and twist them.
  3. Transfer to the baking pan and spread with egg yolk, sprinkle with brown sugar, bake at 180°C (350°F) for 25 minutes. Sprinkle with powdered sugar.
