Sweet brioches
INGREDIENTS
For the dough:
- 150ml (2/3 cup) of warm milk
- 50g (1/4 cup) of sugar
- 7g of dry yeast
- 40ml (8 tsp) of vegetable oil
- 1 egg
- 380g (2 7/8 cups) of flour
- 1/3 tsp of salt
For the cream: 40g (1/2 cup)of sugar
- 20g (1/4 cup) of corn starch
- 1 Egg yolk
- 250ml (1 cup) of warm milk
- 1 tsp lemon zest
- 60g (1/3 cup) Chocolate chips
- Egg yolk
- Brown sugar
- Powdered sugar
METHOD
- In a bowl mix together milk sugar and yeast. Left for 10 minutes, add in oil, egg, flour, and salt. Mix and let it rise for 1 hour. In a pan mix together sugar, cornstarch, egg yolk, lemon zest, and milk.
- Roll out the dough and cover 2/3 of it with prepared cream and chocolate chips, fold the dough into three parts and cut into strips and twist them.
- Transfer to the baking pan and spread with egg yolk, sprinkle with brown sugar, bake at 180°C (350°F) for 25 minutes. Sprinkle with powdered sugar.
