Milk Mysore Pak is a delicious and popular Indian sweet made with milk, ghee, sugar, and gram flour (besan). It has a rich and melt-in-your-mouth texture. Here's a recipe for Milk Mysore Pak:

Ingredients:

  • 1 cup gram flour (besan)
  • 1 cup sugar
  • 1 cup milk
  • 1 cup ghee (clarified butter)
  • A pinch of cardamom powder
  • Chopped nuts for garnishing (optional)

Instructions:

  1. Heat a heavy-bottomed pan or kadai on medium heat and add ghee to it. Allow the ghee to melt completely.
  2. Add the gram flour (besan) to the melted ghee and mix well, ensuring there are no lumps. Cook the gram flour in the ghee on low heat, stirring continuously, for about 8-10 minutes until it turns aromatic and changes color slightly to a light golden brown.
  3. In a separate saucepan, heat milk until it comes to a boil.
  4. Slowly add the hot milk to the roasted gram flour mixture, stirring continuously to prevent lumps from forming.
  5. Add sugar to the mixture and mix well until the sugar dissolves completely.
  6. Continue cooking the mixture on low heat, stirring continuously, for about 10-15 minutes until the mixture thickens and starts leaving the sides of the pan. It should have a smooth and glossy consistency.
  7. Add a pinch of cardamom powder and mix well.
  8. Grease a tray or plate with a little ghee and set it aside.
  9. Pour the thickened mixture onto the greased tray or plate and spread it evenly using a spatula.
  10. Garnish with chopped nuts (optional) and allow it to cool for about 1-2 hours until it sets completely.
  11. Once it cools and sets, cut the Milk Mysore Pak into square or diamond-shaped pieces.
