4 Meals Anyone Can Make

Easy Chicken Alfredo Penne

Ingredients
for 6 servings

1 ½ lb chicken breast, cubed
2 tablespoons butter
½ teaspoon dried oregano
½ teaspoon dried basil
½ teaspoon salt
½ teaspoon pepper
16 oz penne pasta, cooked
¼ cup fresh parsley
¼ cup shredded parmesan cheese
SAUCE

2 tablespoons butter
4 cloves garlic, minced
3 tablespoons flour
2 cups milk
½ teaspoon dried oregano
½ teaspoon dried basil
½ cup shredded parmesan cheese
½ teaspoon salt
½ teaspoon pepper

Preparation

  1. In a pan over medium-high heat, melt butter, then add the chicken breast.
  2. Season with salt, pepper, oregano, and basil. Cook 8-10 minutes or until chicken is fully cooked.
  3. Remove from heat and set chicken aside.
  4. In the same pan over medium heat, melt butter and add the garlic. Cook until the garlic begins to soften.
  5. Add half of the flour to the garlic and butter, stirring until incorporated. Then add the rest of the flour and stir.
  6. Pour in the milk a little bit at a time, stirring well in between, until fully incorporated and sauce begins to thicken.
  7. Season with salt, pepper, oregano, and basil, and stir well to incorporate.
  8. Add parmesan cheese and stir until melted.
  9. Pour the sauce over cooked penne pasta, add the chicken and mix well.
  10. Add parsley and extra parmesan. Mix well.
  11. Enjoy!

BBQ Chicken Dippers

Ingredients
for 4 servings

1 tube refrigerated pizza dough, refrigerated
1 ½ cups shredded chicken
1 cup BBQ sauce, divided
1 cup shredded cheddar cheese
½ cup red onion, diced
2 tablespoons parsley

Preparation

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix shredded chicken with ½ cup (115) barbecue sauce. Set aside.
  3. Spread pizza dough out on a parchment-lined pan.
  4. Bake 10 minutes.
  5. Top with remaining barbecue sauce, cheddar, chicken, mozzarella, red onion, and parsley.
  6. Bake an additional 10 minutes.
  7. Slice and dip!
  8. Enjoy!

Ingredients
for 3 servings

5 cups milk
1 lb elbow macaroni, dry
2 cups cheddar cheese, shredded

Preparation

  1. In a large pot, bring the milk to a boil.
  2. Add the pasta and stir constantly until the pasta is cooked, about 10 minutes.
  3. Turn off the heat, then add the cheddar. Stir until the cheese is melted and the pasta is evenly coated.
  4. Stir until the cheese is melted and the pasta is evenly coated.

Easy Fish Tacos

Ingredients
for 8 servings

CABBAGE SLAW

3 cups green cabbage, shredded
½ cup red onion, diced
1 cup sour cream
1 lime, juiced
¼ teaspoon salt
TACOS

4 tilapia fillets
¼ teaspoon cayenne pepper, ground
½ teaspoon garlic powder
½ teaspoon cumin
½ teaspoon salt
½ teaspoon pepper
16 corn tortillas
GARNISH

cilantro, to taste
lime, to taste

Preparation

  1. In a large bowl, combine green cabbage, red onion, sour cream, lime juice, and salt. Chill until ready to serve.
  2. In a bowl, mix cayenne, garlic powder, cumin, salt, and pepper. Season each tilapia fillet on both sides with the seasoning mix.
  3. Over medium-high heat, cook 2 fillets at a time for 8 minutes, flipping halfway. Repeat for the remaining fillets.
  4. Using a fork, break apart the fillets into bite-size pieces.
  5. Right before serving, heat the corn tortillas in the pan over high heat. Remove from the pan and assemble the tacos with the cabbage slaw and tilapia.
  6. Garnish with cilantro and lime juice.
  7. Enjoy!
