Whole Stuffed Chicken

Preparation of Marinade

  • 2 tbsp Oil
  • 3 Onions (sliced)
  • 1 cup Dry Coconut (grated)
  • 1/2 cup Cashew Nuts
  • 1/4 cup Raisins
  • 1 tbsp Oil
  • 1 tbsp Garlic Paste
  • 1 tbsp Ginger Paste
  • 1/2 tsp Turmeric Powder
  • 2 tbsp Red Chilli Powder
  • 1 tsp Garam Masala Powder
  • 2 tsp Goda Masala Powder (Recipe given below)
  • Salt (as required)
  • 1 kg Whole Chicken (cleaned)
  • 3 Boiled Eggs

For the Gravy

  • 2 tbsp Ghee
  • 1/4 tsp Asafoetida
  • 1 tsp Ginger Paste
  • 1 tsp Garlic Paste
  • 1 cup Tomato Purée
  • 1 cup Curd (whisked)
  • 1/4 tsp Turmeric Powder
  • 1 tbsp Red Chilli Powder
  • 1/2 tsp Garam Masala Powder
  • 1 tsp Goda Masala Powder
  • Water (as required)

For Flavoring

  • Coal
  • 1 tsp Ghee
  • 10:02- For Garnish
  • Onion Rings
  • Lemon
  • Tomato Slices

Ingredients

  • 1 kg Coriander Seeds
  • ¼ kg Cumin Seeds
  • ¼ kg Dry Red Chillies
  • ¼ kg Sesame Seeds
  • 100gm Poppy Seeds
  • 50 gm Black Cumin Seeds
  • 20gm Cinnamon
  • 20 gm Cloves
  • 20 gm Green Cardamom
  • 20 gm Nutmeg
  • 20 gm Star Anise
  • 20 gm Cassia Buds
  • 20 gm Stone Flower
  • 20 gm Bay Leaves
  • 200 gm Dry Coconut

METHOD:

1. Roast all the ingredients separately except poppy seeds, coriander seeds, sesame seeds, and the red chillies in a little oil.
2. Cool all the ingredients and grind to a fine powder and mix well.
3. Cool again once more and store in an airtight container.
