Ingredients:

  • ONION 1 MEDIUM SIZED (CHOPPED)
  • SALT A PINCH
  • CHICKEN THIGHS 250 GRAMS
  • CHICKEN BREAST 250 GRAMS
  • GREEN CHILLIES 3-4 NOS.
  • GINGER 1 INCH (CHOPPED)
  • GARLIC 1 TBSP (CHOPPED)
  • FRESH CORIANDER SMALL HANDFUL (CHOPPED)
  • MINT SMALL HANDFUL (CHOPPED)
  • POWDERED SPICES
  • SPICY RED CHILLI POWDER | 1 TSP
  • CUMIN POWDER 1 TSP
  • TURMERIC POWDER A PINCH
  • GARAM MASALA 1 TSP
  • BLACK SALT 1 TSP
  • CORIANDER POWDER 1 TSP
  • LEMON JUICE 1 TSP
  • SALT TO TASTE
  • BLACK PEPPER POWDER A PINCH
  • GHEE 2 TBSP FOR MARINADE & AS REQUIRED FOR BASTING

Red Chutney

Ingredients:

  • KASHMIRI RED CHILLIES 10-12 NOS. (SOAKED AND DESEEDED)
  • GREEN CHILLIES 2-3 NOS.
  • TAMARIND PULP 3-4 TBSP
  • JAGGERY 1 TSP
  • CUMIN POWDER 1 TSP
  • BLACK SALT 1 TSP
  • GARLIC 5-6 CLOVES
  • SALT TO TASTE
  • WATER AS REQUIRED

Green Chutney

Ingredients:

  • FRESH CORIANDER 1 CUP PACKED PACKED
  • MINT 1/2 CUP PACKED
  • GINGER 1/2 INCH
  • GARLIC 3-4 CLOVES
  • GREEN CHILLIES 5-6 NOS.
  • BLACK SALT 1 TSP
  • ANARDANA POWDER 2 TSP
  • SALT TO TASTE
  • WATER AS REQUIRED
  • ICE CUBES 1-2 NOS.

Onion salad

  • ONIONS 2 MEDIUM SIZED (SLICED)
  • FRESH CORIANDER SMALL HANDFUL
  • MINT SMALL HANDFUL
  • KASHMIRI RED CHILLI POWDER 1 TSP
  • CHAAT MASALA 1/2 TSP
  • LEMON JUICE 1 TSP
  • MUSTARD OIL 1 TSP
  • MIX LIGHTLY TO COAT WELL
