Zucchini fritters


  • 140g of zucchini
  • 200g (1 1/2 cups) of all-purpose flour
  • 16g (1 tbsp) of baking powder
  • 10g (1/2 tbsp) of salt
  • 200ml (3/4 cup) of water
  • Oil for frying


  1. Wash, dab, and cut the ends of the courgettes. Cut them into very thin slices with a mandolin cutter.
  2. In a bowl add the flour, baking powder, salt, and water, and mix. Add the zucchini slices and mix them all well together.
  3. In a high-sided saucepan, heat up plenty of oil. As soon as the oil is hot, take plenty of dough with a spoon and fry until they are golden brown on both sides.
