Berry Oil muffin

Ingredients

  • 7 pieces (2.7inch diameter muffin cups)
  • 1 Egg 60g (room temperature )
  • 50g Light brown sugar (or granulated sugar)
  • 40g Oil (neutral-flavored oil)
  • 100g unsweetened yogurt
  • 80g flour
  • 20g Almond flour
  • 3g baking powder
  • 50g frozen mixed berries
  • 10g almond slices

Directions

Preparation:

Preheat the oven to 356 °F/180℃.
①Combine egg and Sugar in a bowl.
②Add little by little the oil and mix well.
③Add yogurt and mix well.
④Sift flour, almond flour and baking powder over the mixture.
⑤Add frozen mixed berries and fold together until combined.
⑥Spoon the mixture into cases.
sprinkle some almond slices
⑦Bake at 356 °F/180℃ for about 20minutes.
Cool on a wire rack.
