Kharcho soup is a national Georgian beef soup with rice, walnuts and plum tkemali sauce. Today I propose to prepare a variation of pork soup from available ingredients. Instead of beef, we will need pork for kharcho, and instead of plum sauce we will use sour sweet tomato paste. The main thing is to choose certain spices to create a dish that is as similar as possible to traditional kharcho. Ideal for this dish is a mixture of khmeli-suneli spices, grounded coriander, fresh garlic and crushed walnuts.
