Pistachio Date Bars
Ingredients:
- 1 cup pitted dates, chopped
- 1/2 cup shelled pistachios, chopped
- 1 cup rolled oats
- 1/4 cup honey or maple syrup
- 1/4 cup nut butter (almond, peanut, or your choice)
- 1/4 cup coconut oil, melted
- 1/2 teaspoon vanilla extract
- Pinch of salt
Steps:
Step 1: Preheat your oven to 350°F (175°C). Line a baking dish with parchment paper.
Step 2: In a food processor, combine dates, pistachios, rolled oats, honey or maple syrup, nut butter, melted coconut oil, vanilla extract, and a pinch of salt.
Step 3: Process the mixture until it forms a sticky and crumbly texture.
Step 4: Press the mixture firmly into the prepared baking dish, creating an even layer.
Step 5: Bake in the preheated oven for 15-20 minutes or until the edges turn golden brown.
Step 6: Allow the bars to cool completely in the dish before cutting into squares or bars.
