One Pan Roast Whole Chicken and Vegetables
I love a good homemade roast chicken and this juicy whole roasted chicken in one pan with vegetables is flavorful and tender juicy. How to roast a whole chicken, easy, simple and delicious.
INGREDIENTS
- 4 to 4.5 lbs whole chicken
- 2 Tbs melted butter
- salt and pepper to taste ( i used 2 1/2 tsp salt and 1/2 tsp black pepper to season the chicken)
- 1/2 tsp dried parsley
- 1/2 tsp dried oregano
- Stuff chicken with;
- 1 whole lemon
- 1 small onion
- 1 whole garlic head
- handful of fresh thyme
- 3 to 4 sprigs of fresh rosemary
- 3 bay leaves
- for the veggies
- 1 lb red baby potatoes
- 3 medium carrots
- 1 medium onion
- 1 cup brussel sprouts
- 4 cloves of garlic
- 2 Tbs olive oil
- salt and pepper to taste ( i used 1/2 tsp salt and 1/4 tsp black pepper)
- 1/2 tsp dried oregano
- 1/2 tsp dried parsley
