One Pan Roast Whole Chicken and Vegetables

I love a good homemade roast chicken and this juicy whole roasted chicken in one pan with vegetables is flavorful and tender juicy. How to roast a whole chicken, easy, simple and delicious.

INGREDIENTS

  • 4 to 4.5 lbs whole chicken
  • 2 Tbs melted butter
  • salt and pepper to taste ( i used 2 1/2 tsp salt and 1/2 tsp black pepper to season the chicken)
  • 1/2 tsp dried parsley
  • 1/2 tsp dried oregano
  • Stuff chicken with;
  • 1 whole lemon
  • 1 small onion
  • 1 whole garlic head
  • handful of fresh thyme
  • 3 to 4 sprigs of fresh rosemary
  • 3 bay leaves
  • for the veggies
  • 1 lb red baby potatoes
  • 3 medium carrots
  • 1 medium onion
  • 1 cup brussel sprouts
  • 4 cloves of garlic
  • 2 Tbs olive oil
  • salt and pepper to taste ( i used 1/2 tsp salt and 1/4 tsp black pepper)
  • 1/2 tsp dried oregano
  • 1/2 tsp dried parsley
