Dill Pancakes (Russian Blini)

Delicious pancakes with dill are good as an independent dish combined with various sauces or sour cream. Also pancakes on kefir can become the basis for various pancake snacks. These can be rolls (with liver pate, cream cheese and red fish, cottage cheese and greenery) or turnovers (with ham, mince, hard cheese or mushrooms). Pancakes on kefir are very tasty, thin and elastic. Fresh dill makes pancakes incredibly fragrant and delicious. At will, you can experiment with other fresh greenery.

  • Kefir
    200 ml
  • Water
    100 ml
  • Egg
    1 pcs
  • Whole wheat flour
    160 g
  • Vegetable oil

  • Baking soda

  • Salt

  • Dill

  • 1. In deep ware connect kefir and 1 chicken egg.
  • 2. Add a pinch of salt and sugar to the mixture and mix the batter with a wire whisk until homogeneous consistence.
  • 3. In several steps add sieved wheat flour into the batter, each time mixing with a wire whisk until homogeneity.
  • 4. As a result, the batter should be sufficiently thick and homogeneous.
  • 5. Add soda in 100 ml of hot water. Pour the mixture into the batter, mix thoroughly and leave for 15 minutes.
  • 6. Then add vegetable oil to the batter and mix.
  • 7. Cut finely dill, add to the batter and mix again.
  • 8. Heat the pancake frying pan greatly and grease with vegetable oil using a cooking brush. Pour a small amount of pancake batter onto the pan. By rotating the frying pan with circular movements, distribute the batter evenly throughout its perimeter.
  • 9. When the pancake is reddened on one side, gently turn it over and bring it to readiness.
  • 10. Put the ready pancakes on the kefir in a pile on a flat dish or tray.
  • 11. 8 pancakes of 20 cm diameter are obtained from the specified amount of ingredients.
