Classic Italian Wedding Soup
Ingredients:
For Meatballs:
- 1/2 lb ground beef
- 1/2 lb ground pork
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup fresh parsley, finely chopped
- 1 clove garlic, minced
- 1 large egg
- Salt and pepper to taste
For Soup:
- 8 cups chicken broth
- 1 cup small pasta (acini di pepe, orzo, or small shells)
- 4 cups fresh spinach or escarole, chopped
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
For Garnish:
- Fresh parsley, chopped
- Additional grated Parmesan cheese
Preparation:
Step 1: Make Meatballs In a bowl, combine ground beef, ground pork, breadcrumbs, grated Parmesan cheese, chopped fresh parsley, minced garlic, egg, salt, and pepper. Mix until well combined. Shape into small meatballs, about 1 inch in diameter.
Step 2: Brown Meatballs In a large pot, bring chicken broth to a simmer. Add the meatballs and cook until they are browned and cooked through. Remove any excess fat that rises to the surface.
Step 3: Cook Pasta In the same pot, add the small pasta and cook according to package instructions until al dente.
Step 4: Add Greens Stir in chopped fresh spinach or escarole, allowing it to wilt into the soup.
Step 5: Season and Finish Season the soup with salt and pepper to taste. Sprinkle grated Parmesan cheese and let it melt into the broth.
