Ingredients:
For Dough:
- 2 cups whole wheat flour
- Water (as needed)
- Salt (to taste)
For Potato Filling:
- 4 medium-sized potatoes, boiled and mashed
- 1 small onion, finely chopped
- 1-2 green chilies, finely chopped
- 1 teaspoon ginger, grated
- 1/2 teaspoon red chili powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- 1/4 teaspoon garam masala
- Fresh coriander leaves, chopped
- Salt (to taste)
- Ghee or oil (for cooking)
Preparation:
Step 1: Prepare Dough
- In a bowl, combine whole wheat flour, salt, and water to form a soft dough. Knead it well, cover, and let it rest for 15-20 minutes.
Step 2: Make Potato Filling
- In another bowl, mix together mashed potatoes, finely chopped onion, green chilies, grated ginger, red chili powder, cumin powder, coriander powder, garam masala, chopped coriander leaves, and salt. Ensure the mixture is well combined.
Step 3: Divide Dough
- Divide the rested dough into equal-sized portions and roll them into balls.
Step 4: Stuff Parathas
- Take a dough ball, flatten it, and place a portion of the potato filling in the center. Bring the edges of the dough together to enclose the filling. Flatten the stuffed ball gently.
Step 5: Roll Parathas
- Roll the stuffed ball into a flat, round paratha using a rolling pin. Ensure that the filling is evenly distributed.
Step 6: Cook Parathas
- Heat a griddle or tawa over medium heat. Place the rolled paratha on the hot griddle. Cook one side until small bubbles appear, then flip it. Apply ghee or oil on the cooked side.
Step 7: Cook Both Sides
- Continue cooking, applying ghee or oil on both sides, until the paratha is golden brown and cooked thoroughly.
Step 8: Repeat
- Repeat the process for the remaining dough balls and potato filling.
Step 9: Serve Hot
- Serve Aloo ka Paratha hot off the griddle with yogurt, pickles, or your favorite chutney.
Step 10: Enjoy!
- Enjoy the comforting and flavorful Aloo ka Paratha—a delightful Indian flatbread filled with spiced mashed potatoes.
