- 1 block firm tofu, sliced into steaks
- 2 cups mushrooms, sliced (shiitake or cremini)
- 1 onion, thinly sliced

- 1/4 cup vinegar
- 1 tablespoon brown sugar
- 1 bay leaf
- 1 teaspoon peppercorns
