Ingredients:
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup milk
For the Jelly Layer:
- 2 packets (about 1/2 ounce each) unflavored gelatin
- 2 cups fruit juice (such as orange juice or any other flavored juice)
- Assorted fruits, diced (optional)
For the Whipped Cream Topping:
- 2 cups heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a mixing bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a separate large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the butter mixture, alternating with the milk. Begin and end with the dry ingredients, mixing just until combined.
- Pour the cake batter into the prepared cake pan and smooth the top with a spatula.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer the cake to a wire rack to cool completely.
- While the cake is cooling, prepare the jelly layer. In a small saucepan, sprinkle the gelatin over 1/4 cup of fruit juice and let it sit for a few minutes to bloom.
- Heat the remaining fruit juice in a saucepan over medium heat until hot but not boiling. Remove from heat and add the bloomed gelatin mixture. Stir until the gelatin is completely dissolved.
- Let the jelly mixture cool slightly, then pour it over the cooled cake. If desired, add diced fruits on top of the jelly layer.
- Refrigerate the cake for at least 2-3 hours, or until the jelly is set.
- Just before serving, prepare the whipped cream topping. In a chilled mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
- Spread the whipped cream over the jelly layer and decorate the cake as desired.
