Quick Cucumber Kimchi
Make kimchi with cucumbers! Itβs easy, crisp, crunchy and deliciously refreshing!
Ingredients:
- 2 medium english cucumbers
- 2 tbsp salt
- Let it sit for 15 minutes and wash
- 2 tbsp gochugaru (korean chili flakes)
- 1 tbsp coconut sugar
- 1 tbsp vegan fish sauce
- 1 tbsp sesame oil
- 1 tbsp toasted sesame seeds
- 2 tbsp rice vinegar
- 1/2 carrot
- 2 cloves garlic
- 1 stalk scallion
