Homemade Indori Poha
Ingredients:
- 2 cups thick poha (flattened rice)
- 1 large potato, peeled and diced
- 1/2 cup peanuts
- 1/2 cup chopped onions
- 1/4 cup chopped green chilies (adjust to taste)
- 1/4 cup fresh coriander leaves, chopped
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (adjust to taste)
- Salt to taste
- 2 tablespoons cooking oil
- 1 lemon, sliced for garnish
- Sev (thin gram flour noodles) for topping
Steps:
- Rinse the poha in water, drain, and set aside to let it soften.
- In a pan, heat oil over medium heat. Add mustard seeds and cumin seeds. Let them splutter.
- Add diced potatoes and peanuts to the pan. Cook until the potatoes are tender and the peanuts are roasted.
- Stir in chopped onions and cook until they become translucent.
- Add chopped green chilies, turmeric powder, red chili powder, and salt. Mix well.
- Add the softened poha to the pan. Gently mix to coat the poha with the spices.
- Cover the pan and let it cook on low heat for a few minutes, allowing the flavors to meld.
- Garnish the Indori Poha with fresh coriander leaves.
- Serve hot, topped with sev and a slice of lemon on the side.
