Ingredients:
For the Chocolate Crepes:
- 2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1/4 cup granulated sugar
- Pinch of salt
- 4 large eggs
- 3 cups whole milk
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
For the Chocolate Ganache:
- 1 cup heavy cream
- 8 ounces dark chocolate, finely chopped
- 2 tablespoons unsalted butter
Steps:
For the Chocolate Crepes:
Step 1: In a blender, combine flour, cocoa powder, sugar, salt, eggs, milk, melted butter, and vanilla extract. Blend until smooth.
Step 2: Let the batter rest for at least 30 minutes to allow the flour to fully absorb the liquid.
Step 3: Heat a non-stick skillet over medium heat. Pour a small amount of batter into the pan, swirling to spread it thinly. Cook each crepe for about 1-2 minutes on each side or until set.
Step 4: Repeat until all the batter is used, stacking the crepes on a plate as you go.
For the Chocolate Ganache:
Step 5: In a saucepan, heat the heavy cream until it just begins to simmer.
Step 6: Place the finely chopped dark chocolate in a heatproof bowl. Pour the hot cream over the chocolate and let it sit for a minute.

Assembling the Cake:
Step 8: Lay a crepe on a serving plate and spread a thin layer of chocolate ganache over it.
Step 9: Repeat, layering crepes and ganache until you use all the crepes.
Step 10: Ensure the top layer is covered with ganache. Refrigerate the cake for at least 2 hours or until the ganache is set.
Step 11: Before serving, you can dust the top with cocoa powder or garnish with shaved chocolate if desired.
