Stuffed Chicken Breast
Ingredients:
For the Chicken:
- 4 boneless, skinless chicken breasts
- Salt and black pepper to taste
- 1 tablespoon olive oil
For the Stuffing:
- 1 cup spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup sun-dried tomatoes, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and black pepper to taste
Steps:
Step 1: Preheat the oven to 375°F (190°C).
Step 2: In a pan, heat olive oil for the stuffing. Add minced garlic and sauté until fragrant.
Step 3: Add chopped spinach to the pan and cook until wilted. Remove from heat.
Step 4: In a bowl, combine sautéed spinach, crumbled feta, chopped sun-dried tomatoes, salt, and black pepper. Mix well.
Step 5: Cut a pocket into each chicken breast, being careful not to cut all the way through.
Step 6: Stuff each chicken breast with the spinach and feta mixture.
Step 7: Season the stuffed chicken breasts with salt and black pepper.
Step 8: In an oven-safe pan, heat olive oil. Sear the stuffed chicken breasts on both sides until golden brown.
Step 9: Transfer the pan to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through.
Step 10: Allow the stuffed chicken breasts to rest for a few minutes before serving.
Step 11: Optionally, drizzle with pan juices or serve with a side of your choice.
