Crispy Oven-Roasted Breakfast Potatoes
Ingredients:
- 4 large russet potatoes, washed and diced into 1-inch cubes
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- Salt and black pepper to taste
- Chopped fresh parsley for garnish (optional)
Instructions:
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine diced potatoes with olive oil, garlic powder, onion powder, paprika, dried thyme, salt, and black pepper. Toss until the potatoes are evenly coated with the seasoning.
- Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper.
- Roast the potatoes in the preheated oven for 30-35 minutes, or until they are golden brown and crispy on the edges. Toss them halfway through the cooking time for even crispiness.
- Remove the potatoes from the oven and let them cool for a few minutes.
- Garnish with chopped fresh parsley if desired.
