Pineapple Custard Pudding

Pineapple Custard Pudding

Ingredients:

  • 2 cups fresh pineapple, finely chopped
  • 1 cup granulated sugar
  • 1/4 cup water
  • 3 tablespoons cornstarch
  • 4 large egg yolks
  • 2 cups whole milk
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Whipped cream and pineapple slices for garnish (optional)

Cooking Steps:

Step 1: In a saucepan, combine chopped pineapple, sugar, and water. Cook over medium heat, stirring occasionally, until the pineapple releases its juices and the sugar dissolves.

Step 2: In a small bowl, mix cornstarch with a few tablespoons of water to create a smooth slurry.

Step 3: Add the cornstarch slurry to the pineapple mixture and continue to cook, stirring constantly, until the mixture thickens. Remove from heat and let it cool.

Step 4: In a separate bowl, whisk together egg yolks, milk, vanilla extract, and a pinch of salt.

Step 5: Slowly pour the egg yolk mixture into the cooled pineapple mixture, whisking continuously to avoid curdling.

Step 6: Return the combined mixture to the heat and cook over medium-low heat, stirring constantly, until the custard thickens to a pudding consistency.

Step 7: Remove from heat and let the Pineapple Custard Pudding cool slightly.

Step 8: Transfer the pudding to serving bowls or glasses and refrigerate for at least 2 hours or until set.

Step 9: Garnish with whipped cream and pineapple slices before serving, if desired.
