Saltwater taffy is a type of soft candy that is traditionally made with sugar, corn syrup, water, butter, flavorings, and sometimes salt. Despite its name, saltwater taffy does not actually contain saltwater as an ingredient. The name originated from a story in the late 19th century when a candy store in Atlantic City, New Jersey, was flooded by seawater during a storm. The owner jokingly referred to his taffy as "saltwater taffy," and the name stuck.

The process of making saltwater taffy involves cooking a mixture of sugar, corn syrup, water, and butter to a precise temperature. Flavorings and food coloring can be added to create various flavors and colors. Once the mixture reaches the desired temperature, it is poured onto a greased surface and left to cool slightly.

As the taffy cools, it becomes less sticky and more pliable. This is when the taffy is traditionally pulled and stretched on a large hook or machine called a taffy puller. The pulling process incorporates air into the taffy, giving it a lighter and chewier texture. The taffy is then cut into bite-sized pieces and wrapped in individual wax paper or cellophane wrappers to keep it fresh.

Saltwater taffy comes in a wide variety of flavors, ranging from classic choices like vanilla, chocolate, and strawberry to more unique and creative options like cotton candy, watermelon, and root beer. It is often associated with beachside boardwalks and tourist destinations, where it is sold in candy stores and gift shops.

Saltwater taffy is a popular treat, especially during the summer months and at coastal locations. It is enjoyed by people of all ages and is often packaged in colorful assortments or sold by weight, allowing customers to choose their favorite flavors.

Basic Recipe for Saltwater Taffy:

Ingredients:

  • 2 cups granulated sugar
  • 1 cup light corn syrup
  • ¾ cup water
  • 2 tablespoons unsalted butter
  • 1 teaspoon salt
  • 1 teaspoon flavor extract (e.g., vanilla, strawberry, etc.)
  • Food coloring (optional)
  • Powdered sugar or cornstarch (for dusting)

Instructions:

  1. Prepare a large baking sheet or tray by greasing it with butter or lining it with parchment paper.
  2. In a large saucepan, combine the sugar, corn syrup, water, butter, and salt. Place the saucepan over medium heat and stir the mixture until the sugar dissolves and the butter melts.
  3. Once the mixture comes to a boil, insert a candy thermometer into the pan. Cook the mixture, stirring occasionally, until it reaches a temperature of about 250°F (120°C). This is the soft ball stage, which is the desired consistency for taffy.
  4. Remove the saucepan from the heat and let it cool for a couple of minutes. Stir in the flavor extract and food coloring, if desired, until well combined.
  5. Pour the taffy mixture onto the prepared baking sheet. Allow it to cool until it's comfortable to handle.
  6. Grease your hands with butter or oil, then start pulling and stretching the taffy. This can be done by repeatedly pulling the taffy with both hands and folding it back onto itself. Continue pulling and folding for about 10-15 minutes until the taffy becomes lighter in color and becomes firm but still pliable.
  7. Once the taffy has been pulled, roll it into a long rope-like shape and cut it into small bite-sized pieces using greased scissors or a greased knife.
  8. Dust the individual taffy pieces with powdered sugar or cornstarch to prevent sticking.
  9. Wrap each piece of taffy in wax paper or cellophane wrappers to keep them fresh.
  10. Enjoy your homemade saltwater taffy!

Remember to exercise caution when working with hot sugar mixtures, as they can cause burns. It's also important to note that this recipe is a basic starting point, and you can customize it by adding different flavors, colors, or even mix-ins like nuts or dried fruits to create your own unique variations.
