  • BLACK PEPPER POWDER | рдХрд╛рд▓реА рдорд┐рд░реНрдЪ рдкрд╛рдЙрдбрд░ A PINCH
  • VINEGAR | рд╕рд┐рд░рдХрд╛ 1 TSP
  • LIGHT SOY SAUCE | рд▓рд╛рдЗрдЯ рд╕реЛрдпрд╛ рд╕реЙрд╕ 1/4 TSP
  • GINGER GARLIC GREEN CHILLI PASTE | рдЕрджрд░рдХ рд▓рд╣рд╕реБрди рдФрд░ рд╣рд░реА рдорд┐рд░реНрдЪ рдХреА рдкреЗрд╕реНрдЯ 1 TSP

Butter Garlic Sauce

  • GARLIC | рд▓реЗрд╣рд╕реБрди 1/3 CUP
  • BUTTER | рдордХреНрдЦрди 4 TBSP
  • GREEN CHILLI | рд╣рд░реА рдорд┐рд░реНрдЪ 2 NO. (CHOPPED)
  • CORIANDER STEM | рдзрдирд┐рдП рдХреЗ рдбрдВрдард▓ 2 TBSP (CHOPPED) (OR CELERY)
  • HOT WATER | рдЧрд░рдо рдкрд╛рдиреА 100 - 150 ML
  • LEMON JUICE | рдиреАрдВрдмреВ рдХрд╛ рд░рд╕ 1 TSP
  • LEMON ZEST | рдиреАрдВрдмреВ рдХрд╛ рдЫрд┐рд▓рдХрд╛ OF A LEMON
  • SPRING ONION | рд╣рд░рд╛ рдкреНрдпрд╛рдЬрд╝ A LARGE HANDFUL
  • SPRING ONION GREENS | рд╣рд░реЗ рдкреНрдпрд╛рдЬрд╝ рдХреЗ рдкрддреНрддреЗ (FOR GARNISHING)

Method:

  1. Cut the chicken breasts into flat thin slices & transfer them into a bowl, you can also cut them into cubes/chunks, I prefer slices.
  2. Add salt, black pepper powder, vinegar, light soy sauce & ginger garlic green chilli paste & mix well to coat the chicken with all the ingredients.
  3. Further add corn flour, refined flour & egg white, mix well again & your chicken is ready to be fried.
  4. Add the garlic into a chopped & chop it roughly, you donтАЩt need finely minced garlic for this recipe.
  5. Set a pan over high heat & add the oil for frying the chicken, let the oil get moderately hot.
  6. Carefully add the chicken into the hot oil & fry it over medium high flame until golden brown from both sides.
  7. Once fried transfer the chicken onto a sieve.
  8. To make the sauce set a wok over high heat, add the butter & let it melt.
  9. Further add the roughly chopped garlic, green chilli & chopped coriander stems (you can also add chopped celery instead of the coriander stems), stir well & cook the garlic for 2-3 minutes over medium flame, you donтАЩt have to cook the garlic until itтАЩs golden brown.
  10. Add hot water to make the sauce & stir well.
  11. Then add salt (add only a pinch as butter also contains a lot of salt), light soy sauce, vinegar, black pepper powder & sugar, stir well & cook over high flame for 2-3 minutes.
  12. Make a slurry by combining the corn flour with some water & add it to the wok & stir continuously to thicken the sauce.
  13. Once the sauce thickens, add the fried chicken, lemon juice, lemon zest & spring onions, toss well to coat the chicken.
  14. Your delicious butter garlic chicken is ready, serve hot & garnish it with some spring onion greens.
