Onion Tomato Miso Soup
Ingredients:
- 1 tablespoon vegetable oil
- 1 large onion, thinly sliced
- 2 tomatoes, diced
- 2 tablespoons miso paste (white or red)
- 4 cups vegetable broth
- 1 cup water
- 1 cup tofu, cubed
- 1 cup spinach or kale, chopped
- 2 green onions, sliced
- 1 teaspoon grated ginger
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- Red pepper flakes (optional, for heat)
- Cooked rice or noodles (optional, for serving)
Preparation:
Step 1: Sauté Onion and Garlic In a large pot, heat vegetable oil over medium heat. Add thinly sliced onions and sauté until they become translucent. Add minced garlic and grated ginger, and sauté for an additional minute.
Step 2: Add Tomatoes Add diced tomatoes to the pot and cook until they begin to soften.
Step 3: Dissolve Miso Paste In a small bowl, dissolve miso paste in a few tablespoons of the vegetable broth. Add the miso mixture to the pot and stir well to combine.
Step 4: Pour Broth and Water Pour the remaining vegetable broth and water into the pot. Stir to incorporate the miso paste evenly.
Step 5: Bring to Simmer Bring the soup to a simmer over medium heat. Be cautious not to boil it, as boiling miso can diminish its flavor.
Step 6: Add Tofu and Greens Once the soup is simmering, add cubed tofu and chopped spinach or kale. Let them cook for a few minutes until the greens wilt and the tofu is heated through.
Step 7: Season with Soy Sauce and Rice Vinegar Season the soup with soy sauce and rice vinegar. Adjust the quantities to suit your taste preferences.
Step 8: Optional Spice If you like a bit of heat, add red pepper flakes to the soup.
