Huli Huli Chicken is a Hawaiian-style grilled chicken dish that is sweet and savory. Here's a recipe for Huli Huli Chicken that you can make at home:
Ingredients:
- 4-6 boneless, skinless chicken thighs
- 1/2 cup soy sauce
- 1/2 cup pineapple juice
- 1/4 cup brown sugar
- 1/4 cup ketchup
- 2 tablespoons rice vinegar
- 2 tablespoons Worcestershire sauce
- 2 cloves garlic, minced
- 1 tablespoon grated ginger
- 1/4 teaspoon black pepper
- Pineapple slices (optional)
Instructions:
- In a large bowl, whisk together soy sauce, pineapple juice, brown sugar, ketchup, rice vinegar, Worcestershire sauce, minced garlic, grated ginger, and black pepper.
- Reserve 1/2 cup of the marinade for later use.
- Add the chicken thighs to the marinade and toss to coat.
- Cover and refrigerate for at least 2 hours, or overnight.
- Preheat your grill to medium-high heat.
- Remove the chicken from the marinade and discard the remaining marinade.
- Grill the chicken for 5-7 minutes on each side, or until fully cooked.
- During the last few minutes of grilling, brush the reserved marinade onto the chicken and add the pineapple slices to the grill, if using.
- Once the chicken is fully cooked and the marinade is caramelized, remove from the grill and let it rest for a few minutes.
- Serve the Huli Huli Chicken with the grilled pineapple slices, if desired.
