Cheese and Tomato Chicken Fillet

I like to cook fast and delicious dishes in the oven. Today I want to suggest you bake chicken fillet with tomatoes and cheese. The meat is very tender and delicious, with an appetizing golden cheese crust on top. Fresh tomatoes make chicken fillet especially juicy and soft, meat just melts in the mouth. The chicken fillet prepared in this way will be suitable for both everyday menu and holiday table. For the recipe you can use any cheese that melts well in the oven: Russian, Edam, Gouda or mozzarella. Any side dish can be offered to this baked chicken – mashed potato, grilled vegetables or fresh salad.

  • Chicken fillet
    600 g
  • Cheese
    100 g
  • Tomato
    150 g
  • Mayonnaise
    1 tbsp
  • Mustard
    1 tsp
  • Seasoning for chicken
    1 tsp
  • Vegetable oil
    1 tbsp
  • Salt
    - to taste
  • Black pepper
    - to taste


  • 1. Wash chicken fillet and clean from fat and skins. Cut the prepared fillet along into halves. Then cut each piece of meat into 2 pieces of approximately the same size.
  • 2. Cover chicken fillet with food film and beat meat with meat pounder.
  • 3. On the bottom of the heat-resistant mold for baking pour a bit of vegetable oil. Put pieces of chicken fillet in the prepared mold. Salt and season meat with spices.
  • 4. Mix mayonnaise and hot mustard to homogeneous consistence. Apply the obtained mixture on pieces of chicken fillet so that chicken fillet in the oven with tomatoes becomes juicy.
  • 5. On top, lay out fresh tomatoes cut into thin rings.
  • 6. Grate hard cheese on a large grater. Put grated cheese on the top of tomatoes.
  • 7. Cover the mold with a lid or food foil and send chicken fillet to the oven pre-heated to 180 degrees. In 30-35 minutes chicken fillet with cheese and tomatoes in the oven will be ready.
