Loaded Tater Tot Nachos

Buffalo Chicken Totchos

Ingredients
for 8 servings

2 lb frozen tater tot
BUFFALO CHICKEN

2 ½ cups rotisserie chicken, shredded, boneless and skin discarded
salt, to taste
pepper, to taste
¾ cup buffalo sauce
2 green onions, thinly sliced
CHEESE SAUCE

1 ½ cups shredded sharp cheddar cheese
1 tablespoon cornstarch
1 cup evaporated milk
1 tablespoon buffalo sauce
GARNISH

6 strips smoked bacon, cooked and diced
¼ cup blue cheese dressing
1 green onion, thinly sliced
salt, to taste
pepper, to taste

Preparation

1. Preheat oven to 425°F (220°C).
2. Arrange tater tots on a 11x17 inch (28x43 cm) nonstick baking sheet.
3. Place strips of bacon on a separate baking sheet, and bake along with the tater tots.
4. Bake the tater tots according to package directions, about 20-25 minutes, flipping halfway.
5. While the bacon and tater tots cook, prepare your buffalo mixture and cheese sauce.
6. In a mixing bowl, season chicken lightly with a pinch of salt and pepper. Add the green onions and buffalo sauce. Mix well and keep warm.
7. In a pot, combine cheddar cheese and cornstarch. Stir until cheese is well coated with the cornstarch. Set the saucepan set over medium heat, adding in evaporated milk and buffalo sauce.
8. Bring sauce to simmer, whisking constantly until cheese has melted and sauce has thickened, about 5-8 minutes. Set aside and keep warm over very low heat. Stirring occasionally to prevent burning.
9. Once crispy, remove bacon from oven. Place strips on top of a paper towel to strain excess fat. Chop strips into a rough dice. Set aside
10. Remove tater tots from the oven once lightly browned on the bottom. Lightly season with a pinch of salt and pepper.
11. To assemble totchos, layer tater tots followed by the cheese sauce and buffalo chicken onto your serving platter.
12. Garnish with blue cheese dressing, remaining buffalo sauce, bacon and remaining green onions.
13. Enjoy!

Honey Mustard Chicken Tater Tot Nachos

Ingredients
for 6 servings

TOTCHOS

2 lb frozen tater tot
4 boneless, skinless chicken thighs
1 tablespoon whole grain mustard
2 tablespoons olive oil
salt, to taste
pepper, to taste
½ red onion, sliced
1 cup cheddar cheese
1 cup monterey jack cheese
HONEY MUSTARD SAUCE

2 tablespoons honey
1 tablespoon whole grain mustard
1 tablespoon dijon mustard
1 tablespoon olive oil
OPTIONAL TOPPINGS

½ cup cherry tomato, or grape tomato, havled
1 avocado, sliced
sour cream
2 scallions, sliced

Preparation

1. Place frozen tater tots on a baking sheet and bake at 450˚F (230˚C) for 20 minutes, or until crispy. Set aside.
2. In a large bowl, toss chicken thighs with 1 tablespoon whole grain mustard, salt, pepper, and 1 tablespoon olive oil.
3. In a cast iron skillet, cook on high heat until there is a nice brown sear on the surface of the chicken, and the inside is no longer pink.
4. Roughly four minutes each side. Set chicken aside.
5. Cook onions until caramelized. Set onions aside.
6. Cut the chicken into bite-size cubes.
7. Wipe the skillet of excess fat.
8. Layer with cooked tater tots. Top with chicken.
9. In a small bowl, combine all ingredients for honey mustard dressing.
10. Pour the dressing on the chicken and tots. Top with onion, then cheddar and monterey jack cheese.
11. Broil from 5-10 minutes, or until cheese is melted.
13. Load the dish with tomatoes, avocados, sour cream, and scallions. Serve immediately.
